
Rich & Savory Vegan Mapo Tofu
Mapo tofu without the pork loses nothing here. Blended soy meat crumbles get seasoned into a savory "meat miso," doubanjiang and sweet bean paste do their usual deep-flavor work, and a spoonful of chili crisp sneaks in crunch and umami where the meat used to be.
Everything comes from a normal supermarket shelf — no specialty vegan products — and it lands on the table in 30 minutes. Serve it over hot rice and expect seconds.
Ingredients
- Dried soy meat (TVP), mince typerehydrated1 oz (about 1/3 cup)
- Silken tofuone 12- to 14-oz block
- Carrot1/5 carrot
- Onion1/4 onion
- Garlic chives (nira)a small handful
- Long green onion (naganegi)or the white parts of 3–4 fat scallions1

- Potato starchor cornstarch, mixed with a little water1–2 Tbsp
Savory miso base

Vegan dashi concentrate: Most shirodashi contains fish, so check the label. No vegan one on hand? Use 1 tsp kombu dashi powder plus 2 tsp light soy sauce.
Tianmianjiang: Hoisin sauce is the closest swap; red miso mixed with a little sugar also works.
Dried soy meat: Finely crumbled firm tofu (squeezed well) or chopped mushrooms give a different but still satisfying texture.
Instructions
Rehydrate the soy meat, then pulse it in a blender or food processor into fine crumbles.

Finely mince the carrot, onion, garlic chives and long green onion.

Heat 1 Tbsp of oil in a skillet and fry the soy meat crumbles with the tianmianjiang, sugar and soy sauce — this is your savory 'meat miso' base.

Microwave the tofu about 5 minutes to drive off excess moisture, then break it into rough chunks.

Stir-fry the minced vegetables in the skillet, then add the doubanjiang and garlic and fry until fragrant.

Add the meat-miso base from step 3, the water, dashi concentrate, tofu and chili crisp, and simmer briefly.

Once everything is heated through, swirl in the potato starch slurry to thicken the sauce.

Serve topped with sansho pepper, sliced green onion, and extra chili oil to taste.

Tips
Don't skip drying out the tofu in the microwave. If it goes into the sauce still full of water, it dilutes everything and the flavor turns flat — this one step is what keeps the sauce rich.
The heat comes in layers: doubanjiang for depth, chili crisp for savory crunch, chili oil and Sichuan pepper at the table. Scale each layer to your spice tolerance — the base recipe is a rice-friendly medium.
