Tomato & Avocado Zuke Don (Vegan Marinated Rice Bowl)
*Zuke don* is usually a bowl of rice topped with soy-marinated raw fish. This version swaps in avocado and tomato: half an hour in soy sauce, wasabi and sesame is enough for the avocado to turn silky and take on the seasoning, while the tomato adds its juice to the marinade.
There is nothing to cook beyond the rice. Cut, toss, chill for 30 minutes, then spoon everything over lightly vinegared rice with torn nori. It makes one generous bowl and is a good fit for hot days when you don't want to turn on the stove.

Perilla oil (egoma oil): Toasted sesame oil works just as well and is easier to find.
Seasoned nori: Seasoned nori often contains bonito or shrimp extract, so check the label. Plain toasted nori (the kind sold for sushi) or plain nori snack sheets are a safe swap.
Wasabi paste: Wasabi powder mixed with a little water works too. Some tube wasabi contains non-vegan additives, so check the label.
Instructions
Cut the tomato and avocado into bite-size pieces.

Toss the tomato and avocado with the soy sauce, perilla oil, sesame seeds and wasabi. Chill in the fridge for 30 minutes.

Add the vinegar to the rice and mix well. Put the rice in a bowl and scatter torn nori all over it.

Top with the chilled tomato and avocado. Pour all of the marinade over too โ it seasons the rice.
Tips
Wasabi and soy sauce suit avocado and tomato well, and the result is a light, refreshing bowl.
Don't leave the marinade behind in the mixing bowl. Pour every drop over the rice.
